I stopped into a cafe on Via Umberto in Modica in search of this pizza. I picked up a piece of ricotta and sausage focaccia and a hot caffè for only 3€. Not bad for a quick lunch. It’s like a delicious thin crusty top with layers in the middle similar to lasagne noodles, crisp bread on the bottom, and all types of god damn goodness in between.
This pizza is a typical dish from the town of Modica in the provence of Ragusa, Sicily. It is a type of stuffed flat bread. It is made with a very thin layer of rectangular dough that is filled and folded in on itself three or four times. The filling varies but the typical combinations cheese and onion, cheese and sausage, tomato and onion, or tomato and eggplant.
